This journey began at home, when my wife discovered she needed to go to a wheat-free diet. The challenge of producing interesting and delicious alternatives was fun! I also discovered heirloom wheat, which is easier to digest and doesn’t have all of the “bad stuff” that’s made its way into our foods.
Then my daughter had friends over for her birthday party. One girl had several food allergies and it broke my heart to see that she might feel left out by not being able to enjoy the treats we served. I quickly put together wheat-free, dairy-free, egg-free cupcakes with a coconut cream glaze. She asked where they came from, where her mom could order desserts that she could eat. The answer was “From me!” There the idea for Smart Cookie was born.
